We present an easy take on a cocktail found on the seasonal drinks list. Designed as a large-volume prepared mix that is bursting with the tastes of the holiday season, making it perfect for a celebration. Reserve the remaining syrup to use in morning drinks, sweets, or to mix additional servings of bikinis.
Bikini Recipe
Serves 10 servings
For the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Cocktail (produces 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Method
Making the Syrup: Put all the items into a pot, heat until it reaches a light boil, agitating to dissolve. After that, remove from the heat and leave to cool completely. Pour into an clean bottle, cap it and store in the fridge, it will last for up to one month.
To make Batch Mix: Mix the specified liquids into one large bottle, leave to sit for one hour, then pass it through preferably using muslin, so it's completely strained.
When ready to serve: Measure 85ml of the premix into your stirring glass packed with ice, gently stirring gently for one minute until cold. Filter into a chilled martini glass or equivalent, top with a few cranberries and finish with a light spray of the essential oil over the drink.
